Italian White Bean Salad

This protein-packed salad is perfect for warm weather entertaining. It's easy, portable, and full of flavor. Serve on greens for a light meal or spoon onto crostini for an appetizer.
Ingredients
- 2 (15 ounce) cans cannellini or other white beans (drained and rinsed)
- 1 (6 ounce) can albacore tuna (drained)
- 1 cup chopped sweet onion
- 1 cup chopped red bell pepper
- 3/4 cup fresh flat-leaf parsley leaves (finely chopped)
- 1/4 cup extra virgin olive oil
- 3 tablespoons fresh lemon juice
- 2 tablespoons chopped fresh thyme or oregano (or 2 teaspoon dried)
- Kosher salt (to taste)
- Pepper (to taste)
Optional Ingredients
- 2 tablespoons capers (drained)
Directions
- Combine all ingredients in a serving bowl. Toss to blend well.
- Cover and chill at least 1 hour before serving so flavors can blend.
