New York Beef Steaks with Blue Cheese

Serves 4
Salty, creamy cheese slowly melts atop thick steak to form a luscious and decadent sauce. It's also excellent with other steak cuts including Rib Eye, T-Bone, and Top Sirloin.

Ingredients

  • 4 New York steaks (1-inch thick)
  • 2 1/2 teaspoons kosher salt
  • 1/2 teaspoon pepper

BLUE CHEESE TOPPING

  • 2 ounces cream cheese (at room temperature)
  • 1/4 cup crumbled blue cheese
  • 2 tablespoons finely minced shallot or onion
  • 1 teaspoon chopped fresh flat-leaf parsley leaves
  • Kosher salt (to taste)
  • Pepper (to taste)

Directions

  1. Pat-dry steaks with paper towels. Season both sides with salt and pepper.
  2. In a medium bowl, mix together (or combine in food processor) cream cheese, blue cheese, shallot, and parsley. Add salt and pepper, to taste. Set aside.
  3. Grill steaks on medium-high heat, about 5 to 6 minutes per side for medium rare. The internal temperature should register around 130°F.
  4. Transfer steaks to serving plates. Spoon blue cheese topping onto each hot steak, dividing evenly. Allow steaks to rest and cheese topping to soften 5 minutes before serving.
