Roasted Delicata Squash with Black Garlic and Miso

Enhance the sweet flavor of delicata squash with a savory, umami-rich seasoning paste of black garlic and miso. Remember, you don't have to peel this variety of winter squash—just seed, slice, and cook. Look for black garlic, peeled and ready to use, in the produce department.

Ingredients

  • 4 cloves black garlic
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon miso paste
  • 1/2 tablespoon honey
  • Kosher salt (to taste)
  • Pinch of cayenne pepper
  • 1 delicata squash (about 1 pound) (seeded and cut into 3/4-inch slices)
  • 1 red onion (sliced)

Optional Ingredients

  • Chopped fresh cilantro

Directions

  1. Preheat oven to 400°F. Line a large sheet pan with parchment paper.
  2. In a medium bowl, mash black garlic with back of a fork to form a paste. Stir in olive oil, miso, honey, salt, and a pinch of cayenne pepper. Add squash and onion. Toss to coat.
  3. Spread squash mixture on prepared sheet pan. Roast 20 minutes or until tender and caramelized.
  4. Serve warm. Sprinkle with cilantro, if desired.
