Rum Fizzy (Batch Cocktail)

This easy recipe makes the perfect batch cocktail for your holiday party.
Ingredients
- 1/2 cup Orange-Ginger Simple Syrup (recipe follows)
- 16 ounces unsweetened 100% cranberry juice
- 10 ounces white rum
- 16 ounces dry sparkling wine (chilled)
- Cranberries (for garnish)
- Orange-Ginger Simple Syrup:
- Peels of 2 oranges (white pith removed)
- 1/2 cup peeled, chopped, fresh ginger root
- 1 cup granulated sugar
Directions
- Make orange-ginger syrup: Combine orange peels, ginger, sugar, and 1 cup water in a small saucepan over high heat. Bring to boil. Reduce heat and simmer 7 minutes. Let cool to room temperature. Strain through a fine mesh strainer and discard solids. Refrigerate in a sealed container until ready to use, up to one week.
- Make cocktail: In a pitcher or quart jar, stir together orange-ginger syrup, cranberry juice, and rum. Refrigerate until ready to serve, up to five days.
- To serve, stir cocktail mixture. Pour into coupe glasses. Top with a few tablespoons sparkling wine.
- Garnish with fresh cranberries.
