Tequila Butter Oysters

These oven-roasted oysters share a couple ingredients with margaritas, so you might as well serve them together! If you are unsure about what type of oysters to get, ask our fishmongers for a seasonal recommendation—they are happy to shuck them for you, too!
Ingredients
- 12 medium-to-large oysters (freshly shucked)
- 4 tablespoons unsalted butter
- 1 tablespoon tequila
- Zest and juice of 1 lime
- Tajín Clásico Seasoning
Optional Ingredients
- Coarse salt or uncooked rice to level oysters while baking
Directions
- Preheat oven to 400°F.
- Nest oysters in layer of coarse salt or uncooked rice spread on rimmed baking sheet to keep them from tipping while baking. Otherwise place directly on baking sheet.
- Bake 8 to 10 minutes or just until oysters are cooked ? edges of oysters will curl away from shell.
- While oysters are baking, melt butter. Stir in tequila along with zest and juice of one lime. Set aside.
- Remove oysters from oven and arrange on serving platter. Spoon butter mixture over oysters. Sprinkle with Tajín and serve warm.
