Tequila Butter Oysters

Tequila Butter Oysters

MAKES 12
These oven-roasted oysters share a couple ingredients with margaritas, so you might as well serve them together! If you are unsure about what type of oysters to get, ask our fishmongers for a seasonal recommendation—they are happy to shuck them for you, too!

Ingredients

  • 12 medium-to-large oysters (freshly shucked)
  • 4 tablespoons unsalted butter
  • 1 tablespoon tequila
  • Zest and juice of 1 lime
  • Tajín Clásico Seasoning

Optional Ingredients

  • Coarse salt or uncooked rice to level oysters while baking

Directions

  1. Preheat oven to 400°F.
  2. Nest oysters in layer of coarse salt or uncooked rice spread on rimmed baking sheet to keep them from tipping while baking. Otherwise place directly on baking sheet.
  3. Bake 8 to 10 minutes or just until oysters are cooked ? edges of oysters will curl away from shell.
  4. While oysters are baking, melt butter. Stir in tequila along with zest and juice of one lime. Set aside.
  5. Remove oysters from oven and arrange on serving platter. Spoon butter mixture over oysters. Sprinkle with Tajín and serve warm.
