Peach Crostini
Makes 12 to 15
Summer peaches, tomatoes, and basil team up for a sensational no-sweat appetizer everyone will love.
Ingredients:
- 1 cup ripe peaches, medium diced
- 1 cup ripe tomatoes, seeded and medium diced
- 1/2 cup red onion, finely diced
- 2 sprigs basil, leaves removed and finely sliced
- 1 tablespoon aged balsamic vinegar
- 2 tablespoons extra virgin olive oil
- Kosher salt, to taste
- Pepper, to taste
- 12 crostini
Directions:
- In a large bowl, gently toss together everything but the crostini. (If you want to make it an hour or two ahead, add salt and pepper just before serving. Cover and chill.)
- Top each crostini with a generous spoonful of peach mixture. Arrange on a platter to serve.
