Walla Walla Sweet Onion Steaks 3 Ways

Serves 6
Grilled Walla Walla sweet onions can't be beat. Pick the sauce that goes best with the rest of your meal and enjoy on a burger, as a side for grilled meat or fish, or with a simple salad.

Ingredients

  • 3 large Walla Walla onions (sliced crosswise into thick rounds with rings intact)
  • Vegetable oil for brushing onions
  • Kosher salt (to taste)
  • Pepper (to taste)
  • Honey Mustard:
  • 2 tablespoons honey
  • 1/4 cup Dijon mustard
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon fresh rosemary leaves (chopped)

BBQ

  • 1/2 cup BBQ sauce
  • Italian:
  • 3 tablespoons aged balsamic vinegar
  • 1 tablespoon fresh lemon juice
  • 1/4 cup extra virgin olive oil
  • Thinly sliced basil leaves

Directions

  1. Preheat grill or grill pan over medium heat.
  2. Brush onions with oil and season with salt and pepper, to taste. Using a spatula, carefully slide onion rounds onto grill. Cook, without turning, until softened and grill marks develop, about 8 minutes.
  3. Flip onions over with spatula and brush tops with sauce. Cook about 5 minutes more. Flip again, brush with more sauce and cook until sauce begins to caramelize, about 1 minute. Watch closely as it happens fast.
  4. Transfer to a platter and serve hot or at room temperature.
