Our Champagne is tops, too: For many of our early years in Seattle, Metropolitan Market had a delightful French chef leading our culinary program. Many longtime locals remember Jacques Boiroux and his famous restaurant Le Tastevin. He’s since retired and moved back to France but his legacy lives on in our bubbly, as every year Jacques heads to the Champagne region to taste and select the best for us. (Tough job, right?) This enables us to pass on a fabulous, authentic Champagne at a great value, one that holds its own against the finest options from France.

The grapes they receive are all premier cru, or “first growth,” meaning they are of the highest quality possible.
