The egg is arguably one of the most vital and versatile ingredients in any chef’s arsenal. It is a universal tool that is featured in nearly every style of cuisine throughout the world, a brilliant binding that’s paved the way for countless culinary developments.
Which is why we take extra care to make sure every Metropolitan Market egg you take home is exemplary—no matter how you crack it.
Our search for a premier-quality egg took us to a fourth-generation family farm in Roy, Washington, nestled along the Nisqually River in the foothills of Mt. Rainier. The chickens there enjoy a free-range life and are fed exclusively an all-vegetarian feed made near the farm. There are no antibiotics or added hormones used, ever. Not only is the farm committed to the ethical treatment of their animals, but they’re also invested in sustainable and environmentally friendly agricultural practices, like being Salmon-Safe certified.
Those ultra-content chickens produce eggs with thick, firm whites and sunny-yellow yolks that are free of any impurities. Both organic and non-organic varieties are available, and our brown eggs are rated Large Grade AA, the highest ranking of quality an egg can receive.
The farm delivers the eggs directly to our stores twice a week, to boot. Next to having chickens right in your backyard, it doesn’t get much fresher than that.
