In Metropolitan Market's early days, Seattleās renowned French chef, Jacques Boiroux, led our culinary team with endless ideas, expertise, and inspiration. Every year, Boiroux would return home to France to visit family and friends and return with stories about the succulent, flame-roasted chicken sold in neighborhood markets. When we remodeled our West Seattle store in 1997, we just knew we had to bring in one of those French Rotisol rotisseries.
Our chickens come from Mary's Chickens, a family-owned business committed to good nutrition that has been raising poultry for three generations. The chickens we receive from Mary's are fed a hormone-free vegetarian diet and are allowed plenty of room to roam cage-free. To preserve their natural flavor, they are air-chilled before packaging. All this ensures that we deliver the highest-quality bird possible, free of GMOs, antibiotics, chemicals, and preservatives.
The chickens are seasoned to perfection before making their way into the rotisserie where they emerge hot and fresh throughout the day. They have become a household staple due not only to their deliciousness, but the myriad ways to enjoy them. Carve and serve with mashed potatoes or dice and toss into a salad.
