Mediterranean Beef and Romaine Pita Recipe
Mediterranean Beef and Romaine Pita
Serves 4
Think of this as an open-faced pita sandwich for serving with utensils rather than eating on the go—for those times you feel like being fancy!
Ingredients:
- 1 pound ground beef
- 1 medium red bell pepper, chopped
- Kosher salt, to taste
- Pepper, to taste
- 4 cups romaine lettuce, chopped
- 1/2 cup feta cheese, crumbled
- 1/3 cup Italian dressing or other vinaigrette
- 1/4 cup chopped pitted Kalamata olives, or olive tapanade
- 4 pitas, toasted
- OPTIONAL:
- Chopped cucumber
- Diced tomato
Directions:
- Heat large nontstick skillet over medium heat until hot. Add ground beef and bell pepper. Cook 8 to 10 minutes, stirring occasionally and breaking meat into crumbles. Season with salt and pepper, to taste.
- Using a slotted spoon, remove beef and peppers from pan and place into large bowl. Add lettuce, cheese, dressing, and olives; toss to combine.
- Top toasted pitas with equal amounts beef salad mixture.
