How to Cook Artichokes
Serves 4
Artichokes are extremely versatile and boast great flavor. Learn how to get the perfect artichoke, every time.
Ingredients:
- 2 artichokes
- 2 bay leaves
- 3 slices lemon
- 2 tablespoons extra virgin olive oil
- Kosher salt, to taste
- Pepper, to taste
Directions:
- Slice top 3/4-inch of artichokes. Use kitchen shears to snip off tips of leaves.
- In a non-aluminum pot (large enough to fit artichokes side by side), add 3 inches water. Bring to boil.
- Place artichokes in pot, stem side down. Add bay leaves and lemon slices to water. Cover pot and cook on medium-high heat.
- Simmer (steam) artichokes 30 minutes or until leaves are tender enough that they can be pulled off with little effort. Check water level frequently, adding more if needed.
- Remove artichokes. Rinse with cold water and drain in colander.
- Drizzle with olive oil and season with salt and pepper. Serve with your favorite salad dressing.

“I was taught (or figured out) to steam the artichokes stem up/leaves down. that way the steam penetrates up into the leaves and heart, and the artichoke cooks faster and more evenly. i also add a splash of white wine and a couple of quartered garlic cloves to the cooking water.”
